First of all a disclaimer: I'm not a programmer and have no idea how difficult it might be to implement this. My idea is just a shot in the dark ... But maybe
So... There is a PDA on the market called Helio. VTech makes it. You can check it out here:

It has Toshiba TX3912 MIPS CPU, which is of the same family with ePods' TX3922. Helio also has 2MB Flash (not clear what kind??) for OS and 8MB SDRAM.
Now the part that gave me this idea.
Helio can be upgraded to new OS by flushing the ROM. OS image files have .BIN extension, which looks promising. Standard OS is VTOS, but there is also port of linuxVR Demo.
Another good news: there is a freely downloadable SDK, Helio emulator for Win32, flash utility and FULL SOURCE CODE. Considering the similarities in hardware I thought that all that info could help to develop or port ROMflash utility to wince for ePods.
