Ok, so it can be done, and without a whole lot of hassle - thanks to the efforts to people like bball and Rasmus. I'm still a little bit confused on exactly what needs to be done, however - can you edit the flash image directly from the IA1? And as far as mounting the image on a PC, what compactflash adapter are you using? To the best of my knowledge, the driver for the Zio! is read-only. And finally, what sort of packages/libraries do I need to have loaded in order to be able to mount the image and edit it? I'd be willing to purchase something else (sandisk?) to help out, if I knew it'd work. Thanks for your help!

I use a PCMCIA-CF adapter in my laptop to do this stuff. Those adapters cost <$10. As for modifying the image. You can modify stuff in / right on your IA-1, but anything on one of the cramfs filesystems can not be modified directly. You have to mount the thing and copy all the files into a directory. Chnage the file in that copied directory, run mkcramfs on that directory and then copy the resulting cramfs file back onto the raw partition. If your new cramfs file is bigger than the partition it is associated with you will need to parted the partitions and shuffle all sorts of things around. So, in general, no, you can't actually modify anything which is why I want to move to an MTD/JFFS2 system, preferably using grub instead of lilo. I just need to find some time to sit down and build the framework for this.
