Actually, they are not that different. I think the Midori images are a touch more "polished", but either would probably work. I prefer the Midori images because (at least one of them) already contains xmms, ssh and a few other handy tools - but I would imagine there are jailbait versions that have all that too.
I'm not sure how much to put into it, but Midori uses a custom kernel based on the 2.4.x kernels. Transmeta, which started Midori Linux, claim to have written in a lot of custom ACPI handling code. I'm not sure, but I think Jailbait uses a largely stock kernel.
Just go with what does the job for you. I doubt the differences are worth haggling over.
