I have been racking my brain trying to find some information on interfacing the MailStation keyboard to a PC via PS/2 or serial. The keyboard has a 16-pin pinout and has 63 keys. Are there any existing keyboard controllers that could easily interface with this or does anyone know how I could create my own controller to scan the existing key matrix? It doesn't matter to me if the controller displays incorrect ASCII values, as I can use a program like "girder" to adjust the values once they are sent to the PC.

Why would you want to? The keyboard stinks. I'm sure you can find plenty of good surplus laptop keyboards on the web which would be more appropriate. Also you can buy laptop keyboard repackaged to connect to a server ps/2 port.

I actually want to go the opposite direction, and connect the mailstation mainboard into a Model 100. Now there's a good keyboard worth salvaging...

Dig into the guts of it with a meter and figure out the matrix of the keyboard. Then get a real keyboard and do the same to it. Now wire the MS keyboard to the board inside the real keyboard and you are done.

Much more hassle than it is worth really since you can get a water proof rollup industrial keyboard for under 20 bucks.
