A friend of mine is offering me either a V1, V3, or V5 I-opener. Sorry, no V4b's; So which of these should I get? Which would you get? Thanks. All are in good shape; v1 has a winchip, v3 and v5 have rise chips; v1 and v3 have original audio chip; v5 has the ada audio chip.

Depends, but for all around hacking ease the V3 or V5 will give you the quickest route. But the V5' sometime have a problem with the speed hack. But it has the switch to set the processor voltage built in. If you would list the mod's you are planning to make it would be easier to tell you which one is best.
