Is it possible to replace the IOpener's motherboard with a mini-ITX motherboard? If so does anyone have any ideas, I have a new IOpener and ITX M/B for this reason, and I am willing to be a test subject.

What a truly pointless idea! You'd need to BUILD FROM SCRATCH a videocard with inverter to drive the I-O's display from elsewhere than the I-O mobo's built-in video circuitry... and what you'd have when you were finished is a sharp little computer with the crappiest display on Earth.
Could you use the WinChip or the SoDIMM from I-O on a mini-ITX? Don't think there are any other commodity parts in there. With the cable insertion angles of a mini-ITX mobo, I can't envision squeezing it into the I-O case.
Spend the value of the I-O and the cost of parts+time building the vidcard and go buy a VGA LCD.

I'd guess the only point to it would be to use the I/Os case as a housing for the M-ITX board use a slim RAM module and try to get an LCD with a controller card and VGA connector all to fit in it. Your right, truly pointless.

Actually if you were doing just for the sport of it, why not? If you got one of those metal fabricated back extension covers, you could do it, of course I would just start with a Gateway Profile chassis myself.
I built up three of those GW profile systems and they are great...
